Linking Northern and Central NJ, Bronx, Manhattan, Westchester and CT

SWEET AND SOUR POACHED SALMON

2 cups water

1 ½  cups sugar

½ cup raisins (optional)

3/4 cup lemon juice

¼ cup white vinegar

1 cup white wine

1 table spoon peppercorns

3 teaspoon salt

6 bay leaves

3 sprigs fresh dill

2 medium onions sliced

1 side of salmon

Thinly sliced cucumber for garnish

Combine water, sugar, lemon juice, dill, peppercorns and bay leaves in a pot. Add sliced onions and salmon steaks. Marinate and refrigerate overnight. Simmer uncovered in marinade until steaks are tender and cooked all the way through, about 20-30 minutes. Serve cold.
