Honey Cake (very large)
Preheat oven to 325°F.
Make a well of these ingredients in a large bowl:
- 3 cups flour
- 3 teaspoons baking powder
- 1 teaspoon cinnamon
- Into the middle, pour:
- ¼ cup sugar
- 1½ cups honey
- ⅓ cup canola oil
- ½ cup dark coffee that has 1 teaspoon baking soda dissolved in it
Add 8 egg yolks and mix together very well.
Separately beat 8 egg whites with ¼ cup of sugar and ½ teaspoon cream of tartar until the concoction is very stiff. Fold into the other bowl and make sure they are mixed together completely but gently.
Pour into an ungreased tube pan and bake for 1 hour and 10 minutes. Check to see if it’s done. Invert and let cool for at least 1 hour before removing from the pan.
This recipe is similar to a honey chiffon; it is very delicious if you like honey cake and is worth all of the steps.
